Soy Dipping Sauce
This is the simple, yet classic, dipping sauce that you will find accompanying your dumplings in many Chinese eateries. The flavors are a balance of salty, sour and slightly sweet and pair well with most any dumpling, steamed, boiled or pan fried. I hope you enjoy.
Ingredients:
1/3 cup gluten free soy sauce
1 1/2 to 2 Tablespoons unseasoned or 'natural' rice wine vinegar
1 teaspoon sugar
1/2 teaspoon toasted sesame oil (optional)
pinch white pepper
warm water

warm water
Garnishes: toasted sesame seeds or thinly sliced green onion, tops only, thinly sliced sticks of ginger or thinly sliced Chinese garlic chives.
Blend all ingredients well, making sure the sugar has incorporated and does not settle at the bottom. Add in enough warm water to make 1 cup of sauce and stir. This will dissolve any remaining sugar. Pour into shallow bowl for presentation and sprinkle the top with any of the garnishes, if desired.
Makes 1 cup
Refrigerate in covered container up to 1 week
